Honey Sesame Chicken

I found this recipe on Pinterst and made it today.  Oh my goodness it was so GOOD.  My husband loved it too!


Slow Cooker Honey Sesame Chicken
Recipe adapted from: Baby Center

Ingredients:
4 boneless, skinless chicken breasts (thighs would be fine too)
Salt and pepper
1 cup honey
1/2 cup soy sauce
1/2 cup diced onion
1/4 cup ketchup
2 tablespoons vegetable oil (could also use olive oil or canola oil)
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional - doesn't really add heat, just adds more flavor)
4 teaspoons cornstarch dissolved in 6 Tablespoons water
Sesame seeds

Directions:
Season both sides of chicken with lightly with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut chicken into bite size pieces, then return to pot and toss with sauce before serving. Sprinkle with sesame seeds and serve over rice or noodles.

***I didn't return my chicken to pot after I cut it up.  I had a lot of sauce and didn't want it to over power everything so I just spooned it on top of chicken and rice.

Chicken-Parmesan Pasta

I made this for dinner last night and my husband LOVED it! It's going to become a regular for sure and it's so easy and fast.


What You Need

6 small boneless skinless chicken breast halves (1-1/2 lb.)
egg whites, lightly beaten
1 cup Italian-style bread crumbs
3 cups  spaghetti sauce, divided
1-1/2 cups Milk Shredded Mozzarella Cheese
1/4 cup Grated Parmesan Cheese
1 tsp. dried oregano leaves
6 oz.  spaghetti, cooked, drained

Make It

HEAT oven to 400ºF.
DIP chicken in egg whites, then in bread crumbs, turning to evenly coat both sides of each breast. Place in 13x9-inch pan sprayed with cooking spray.
BAKE 20 to 25 min. or until chicken is done (165ºF). Top with 2 cups sauce, cheeses and oregano. Bake 5 min. or until mozzarella is melted. Meanwhile, heat remaining sauce.
TOSS spaghetti with sauce; place on plate. Top with chicken.

What's for Dinner Tonight?

I found this recipe at allrecipes.com.  It is the feature recipe of the day and I have a ton of asparagus right now. 

Ingredients

  • 1 1/2 pounds fresh asparagus, trimmed and cut into 1 inch pieces
  • 1/4 cup chicken broth
  • 1/2 pound fresh mushrooms, sliced
  • 8 ounces angel hair pasta
  • 1 tablespoon olive oil
  • 1/2 teaspoon crushed red pepper
  • 1/2 cup grated Parmesan cheese

Directions

  1. Cook pasta according to package instructions.
  2. Heat the olive oil in a nonstick skillet. Saute asparagus in the pan over medium heat for about 3 minutes. Add chicken broth and mushroom slices; cook 3 minutes more.
  3. Drain pasta, and transfer to a serving dish. Gently toss pasta with asparagus mixture; sprinkle with Parmesan and crushed red pepper.

Noodle Bowls

This is my absolutely favorite meal that I make.  It's so yummy and I can't get enough of it.

 
 
1/2 lb. linguine, uncooked
3 cups  broccoli florets
3 carrots, peeled, sliced
2 tsp.  oil
1 lb. beef sirloin steak, cut into strips or Chicken
1/4 cup  KRAFT Asian Toasted Sesame Dressing
1 Tbsp. teriyaki sauce



COOK pasta in large saucepan as directed on package, adding vegetables to the boiling water for the last 2 min.
MEANWHILE, heat oil in large nonstick skillet. Add meat; cook until browned on all sides, stirring occasionally. Stir in dressing and teriyaki sauce; cook 2 min. or until sauce is thickened, stirring occasionally.
DRAIN pasta mixture; place in large serving bowl. Add meat mixture; toss to coat.

I've found that I like more dressing and teriyaki sauce on mine.   Hope you enjoy this recipe as much as I do.

What's for Dinner Tonight?

I  grew up in a family where my mom doesn't cook.  She'll be the first to tell you that.  Most nights we ate cold cereal.  It may sound horrible but it wasn't.  I actually prefer to eat cereal but ever since I had my little boy I try and have a dinner meal every night.  Thankfully my husbands not picky and was always encouraging when I tried to cook and would boil over EVERYTHING.

I absolutely LOVE this website.

It has the easiest recipes and most times you already have everything you need sitting in your house.  I have them send me a weekly newsletter that features recipes with pictures.  I add what I think looks good to my recipe box.  When I need to go to the grocery store I can add the recipe to my shopping list and print out exactly what I need to make the recipe.
